Creamy Mango Cashew Dessert

Silky, rich, and naturally sweet, this chilled mango-cashew dessert is the kind of spoonable treat you can’t stop eating.
Ingredients
- 2 cups ripe mango, diced
- 1 cup raw cashews
- 1 cup whole milk
- 1/2 cup heavy cream
- 1/3 cup sweetened condensed milk
- 3 tbsp sugar
- 1 tsp vanilla extract
- 1/4 tsp ground cardamom
- 1 tbsp lemon juice
- 2 tbsp chopped pistachios or cashews, for garnish
Instructions
- Soak the cashews in hot water for 20 minutes, then drain.
- Add the soaked cashews, diced mango, milk, heavy cream, condensed milk, sugar, vanilla, cardamom, and lemon juice to a blender.
- Blend until completely smooth and creamy, scraping down the sides if needed.
- Taste and adjust sweetness if desired, then pour the mixture into serving glasses or a bowl.
- Chill for at least 2 hours until cold and slightly thickened.
- Top with chopped pistachios or extra cashews before serving.
Tip: For an even thicker, ice-cream-like texture, freeze the blended dessert for 45–60 minutes before serving.
