Chocolate Strawberry Cloud Ice Cream Bars

These viral chocolate strawberry cloud rolls turn whipped cream, sweet strawberries, and a snappy dark chocolate shell into the dreamiest frozen treat.
Ingredients
- 2 cups heavy cream (35%), well chilled
- 3/4 cup sweetened condensed milk
- 1 cup fresh strawberries, finely chopped
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 10 oz dark chocolate, chopped
- 2 tbsp coconut oil or neutral oil
- 6 wooden ice cream sticks
Instructions
- Line a small tray or loaf pan with parchment paper and set aside.
- Whip the chilled heavy cream in a large bowl until soft peaks form. Add the sweetened condensed milk, vanilla extract, and lemon juice, then whip briefly until smooth and fluffy.
- Fold in the chopped strawberries gently so the mixture stays airy. Spread or pipe the mixture into 6 bar-shaped mounds on the lined tray, insert wooden sticks, and freeze for 4-6 hours until completely firm.
- Melt the dark chocolate with the coconut oil in a heatproof bowl until smooth, then let it cool slightly so it is still fluid but not hot.
- Remove the frozen bars from the freezer and dip each one into the melted chocolate, turning to coat fully. Let the excess drip off.
- Place the coated bars back on the parchment and freeze for 10-15 minutes until the shell is set. Serve straight from the freezer.
Tip: For the best crackly shell, make sure the bars are deeply frozen and the melted chocolate has cooled slightly before dipping.
