Chocolate Strawberry Cloud Ice Cream Bars

These viral chocolate strawberry cloud rolls turn whipped cream, sweet strawberries, and a snappy dark chocolate shell into the dreamiest frozen treat.

Ingredients

  • 2 cups heavy cream (35%), well chilled
  • 3/4 cup sweetened condensed milk
  • 1 cup fresh strawberries, finely chopped
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 10 oz dark chocolate, chopped
  • 2 tbsp coconut oil or neutral oil
  • 6 wooden ice cream sticks

Instructions

  1. Line a small tray or loaf pan with parchment paper and set aside.
  2. Whip the chilled heavy cream in a large bowl until soft peaks form. Add the sweetened condensed milk, vanilla extract, and lemon juice, then whip briefly until smooth and fluffy.
  3. Fold in the chopped strawberries gently so the mixture stays airy. Spread or pipe the mixture into 6 bar-shaped mounds on the lined tray, insert wooden sticks, and freeze for 4-6 hours until completely firm.
  4. Melt the dark chocolate with the coconut oil in a heatproof bowl until smooth, then let it cool slightly so it is still fluid but not hot.
  5. Remove the frozen bars from the freezer and dip each one into the melted chocolate, turning to coat fully. Let the excess drip off.
  6. Place the coated bars back on the parchment and freeze for 10-15 minutes until the shell is set. Serve straight from the freezer.

Tip: For the best crackly shell, make sure the bars are deeply frozen and the melted chocolate has cooled slightly before dipping.
