Flourless Chocolate Banana Cake

This flourless chocolate banana cake is rich, fudgy, naturally sweet, and finished with a silky chocolate top and fresh banana slices.
Ingredients
- 2 ripe bananas, mashed
- 3 large eggs
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons peanut butter
- 1 teaspoon vanilla extract
- 1 tablespoon maple syrup or honey (optional)
- 1/4 teaspoon baking powder
- 60 g (2 oz) dark chocolate, melted
- 1 teaspoon coconut oil or butter
- 1/2 banana, sliced, for topping
Instructions
- Preheat the oven to 180°C (350°F) and line a small round or loaf pan with parchment paper.
- Mash the 2 ripe bananas in a bowl until mostly smooth.
- Add the eggs, cocoa powder, peanut butter, vanilla extract, maple syrup if using, and baking powder. Whisk until a thick, smooth chocolate batter forms.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 15–18 minutes, or until the cake is set on top but still slightly fudgy in the center.
- Let the cake cool for 10–15 minutes, then remove it from the pan.
- Mix the melted dark chocolate with coconut oil or butter and spread it over the cooled cake for a glossy finish.
- Top with banana slices, dust with a little cocoa powder if desired, then slice and serve.
Tip: For the fudgiest texture, use very ripe bananas with lots of brown spots and avoid overbaking the cake.
