Healthy Banana Blueberry Oat Cake

This soft, naturally sweet banana blueberry oat cake is a wholesome one-bowl-style bake perfect for breakfast, snacking, or a light dessert.

Ingredients

  • 1 cup rolled oats (90 g)
  • 1 medium banana, chopped (120 g)
  • 1 large egg
  • 1/2 cup milk (120 ml)
  • 1 tsp baking powder (5 g)
  • 1/2 cup blueberries (75 g)
  • 1 tsp vanilla extract
  • 1 tbsp honey or maple syrup (optional)
  • 1 tsp oil or butter, for greasing the pan

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a small baking dish or loaf pan.
  2. Add the rolled oats to a blender and blend until they become a fine oat flour.
  3. Add the chopped banana, egg, milk, baking powder, vanilla extract, and honey or maple syrup if using. Blend until smooth and creamy.
  4. Pour the batter into the prepared pan, then gently fold or scatter the blueberries evenly over the top.
  5. Bake for 25 to 35 minutes, or until the cake is golden and a toothpick inserted in the center comes out mostly clean.
  6. Let the cake cool in the pan for 10 minutes before slicing and serving.

Tip: For the best texture, use a ripe banana with plenty of brown spots, and toss the blueberries in a little oat flour before adding if you want to keep them from sinking.
