Healthy Bounty-Style Ice Cream Bars

These no-bake coconut date bars are creamy, chocolatey, naturally sweet, and taste like a wholesome frozen Bounty treat.

Ingredients

  • 1 cup soft Medjool dates, pitted
  • 1 cup unsweetened shredded coconut
  • 2 cups unsweetened desiccated coconut
  • 1/3 cup milk of choice
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 1/4 cups dark chocolate, chopped
  • 1 tbsp coconut oil
  • 1 tbsp cocoa powder
  • 2 tbsp extra shredded coconut, for topping

Instructions

  1. Line a small loaf pan or square container with parchment paper.
  2. Make the base by blending the dates, shredded coconut, and cocoa powder in a food processor until sticky and well combined. Press the mixture firmly into the bottom of the pan.
  3. In a bowl, mix the desiccated coconut, milk, honey, vanilla, and salt until a thick, moist filling forms. Spread it evenly over the date base and press down well.
  4. Freeze for 1 to 2 hours, or until very firm. Lift out and cut into bar shapes.
  5. Melt the dark chocolate with the coconut oil until smooth. Let it cool slightly.
  6. Dip or coat each frozen bar in the melted chocolate, then place on a parchment-lined tray. Sprinkle with extra shredded coconut before the chocolate sets.
  7. Freeze for 10 to 15 minutes to firm up the coating, then serve straight from the freezer or let sit for 2 to 3 minutes for a softer bite.

Tip: If your coconut filling feels too dry, add an extra splash of milk; if it feels too wet, mix in a little more desiccated coconut until it holds together.
