Healthy Brownie Skillet

This gooey single-serve brownie skillet is naturally sweet, ultra-chocolatey, and perfect warm with a scoop of ice cream on top.

Ingredients

  • 1 ripe banana, mashed
  • 3 tablespoons honey peanut butter
  • 2 tablespoons unsweetened cocoa powder
  • 2-4 tablespoons chocolate chips, plus extra for topping
  • Cooking spray or a little oil for greasing the skillet
  • 1 scoop vanilla or protein ice cream, for serving (optional)

Instructions

  1. Preheat your oven to 350°F and lightly grease a small oven-safe skillet or baking dish.
  2. In a bowl, mash the ripe banana until mostly smooth.
  3. Add the honey peanut butter and cocoa powder, then mix until fully combined into a thick brownie batter.
  4. Fold in the chocolate chips, reserving a few for the top if desired.
  5. Spread the batter evenly into the prepared skillet and sprinkle the remaining chocolate chips over the top.
  6. Bake for 12-15 minutes, or until the edges are set and the center is still soft and fudgy.
  7. Let it cool for 2-3 minutes, then serve warm on its own or topped with ice cream.

Tip: Use a very ripe banana with lots of brown spots for the sweetest flavor, and don’t overbake if you want that molten brownie center.
