Healthy Carrot Cake Oat Muffins

These wholesome carrot cake oat muffins are moist, warmly spiced, and packed with shredded carrots, oats, and crunchy walnuts for the perfect healthy treat.

Ingredients

  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 2 large eggs
  • 1/3 cup maple syrup or honey
  • 1/3 cup coconut oil, melted
  • 1/2 cup plain Greek yogurt
  • 1 1/2 cups finely grated carrots
  • 1/2 cup chopped walnuts
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, mix the oats, whole wheat flour, baking powder, baking soda, and cinnamon.
  3. In another bowl, whisk together the eggs, maple syrup, melted coconut oil, Greek yogurt, and vanilla until smooth.
  4. Fold the wet ingredients into the dry ingredients, then stir in the grated carrots and most of the walnuts, reserving a little for topping.
  5. Divide the batter evenly among the muffin cups, filling each nearly to the top, and sprinkle the remaining walnuts over each muffin.
  6. Bake for 18-22 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
  7. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Tip: For extra carrot-cake flavor, add 1/4 teaspoon nutmeg and a small handful of raisins to the batter.
