Healthy Carrot Cake Oat Muffins

These wholesome carrot cake oat muffins are moist, warmly spiced, and packed with shredded carrots, oats, and crunchy walnuts for the perfect healthy treat.
Ingredients
- 1 cup rolled oats
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 2 large eggs
- 1/3 cup maple syrup or honey
- 1/3 cup coconut oil, melted
- 1/2 cup plain Greek yogurt
- 1 1/2 cups finely grated carrots
- 1/2 cup chopped walnuts
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- In a large bowl, mix the oats, whole wheat flour, baking powder, baking soda, and cinnamon.
- In another bowl, whisk together the eggs, maple syrup, melted coconut oil, Greek yogurt, and vanilla until smooth.
- Fold the wet ingredients into the dry ingredients, then stir in the grated carrots and most of the walnuts, reserving a little for topping.
- Divide the batter evenly among the muffin cups, filling each nearly to the top, and sprinkle the remaining walnuts over each muffin.
- Bake for 18-22 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Tip: For extra carrot-cake flavor, add 1/4 teaspoon nutmeg and a small handful of raisins to the batter.
