Lighter Fudgy Chocolate Cake

This lighter fudgy chocolate cake is ultra-rich, deeply chocolatey, and finished with a glossy ganache for a balanced dessert that still feels totally indulgent.
Ingredients
- 1 cup whole wheat or all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp fine salt
- 2 large eggs
- 1/2 cup plain Greek yogurt
- 1/3 cup maple syrup or honey
- 1/4 cup milk
- 1 tsp vanilla extract
- 1/3 cup dark chocolate chips, plus extra for topping
- 1/4 cup warm milk or light cream for the ganache
Instructions
- Preheat the oven to 350°F (175°C). Line or lightly grease an 8-inch square baking pan.
- In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, whisk the eggs, Greek yogurt, maple syrup, milk, and vanilla until smooth. Stir the wet ingredients into the dry ingredients until just combined, then fold in the 1/3 cup chocolate chips.
- Spread the batter evenly in the pan and bake for 22–28 minutes, until the center is just set and a toothpick comes out with moist crumbs.
- Let the cake cool in the pan for 15 minutes. Meanwhile, make the ganache by pouring the warm milk or light cream over the extra chocolate chips and stirring until smooth and glossy.
- Spread or pour the ganache over the slightly warm cake, letting it drip over the edges. Top with extra chopped dark chocolate if desired.
- Cool a bit longer for clean slices, or serve warm for the fudgiest texture.
Tip: For the richest flavor with less sugar, use good-quality dark chocolate and don’t overbake—the cake should look just set in the middle.
