- 1 ripe banana

- Arrange the cookies in a small container or on a lined plate to form the base.
- Add the cottage cheese, banana, peanut butter, and chopped nuts to a blender or food processor, then blend until completely smooth and creamy.
- Spoon the filling over the cookie base and shape it into a thick bar or mini cake.
- Melt the dark chocolate with the coconut oil until smooth, either in short microwave bursts or over a double boiler.
