Quick Tortilla Pizza with Spinach

This quick tortilla pizza is loaded with creamy cottage cheese, veggies, and melty cheese, then baked until golden and irresistibly crispy.
Ingredients
- 1 large flour tortilla
- 1 large egg
- 1/2 cup cottage cheese
- 1 medium tomato, thinly sliced
- 1/2 cup cauliflower, finely grated or very finely chopped
- 1 cup fresh spinach, roughly chopped
- 1 cup shredded mozzarella or pizza cheese
- 1 tbsp olive oil
- 1/2 tsp dried oregano
- 1/4 tsp garlic powder
- Salt and black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C) and place the tortilla on a parchment-lined baking tray.
- In a small bowl, whisk the egg with the cottage cheese, garlic powder, a pinch of salt, and black pepper until combined.
- Spread the cottage cheese mixture over the tortilla, leaving a small border around the edges.
- Top evenly with the grated cauliflower, chopped spinach, and tomato slices, then sprinkle over the shredded cheese and oregano.
- Drizzle lightly with olive oil for extra color and crispiness.
- Bake for about 12–15 minutes, or until the edges are crisp and the cheese is melted, bubbly, and golden.
- Let it cool for 1–2 minutes, then slice and serve warm.
Tip: For an extra crispy base, bake the tortilla for 2 minutes before adding the toppings.
