5-Ingredient Blueberry Greek Yogurt Ice Cream

This creamy, fruity blueberry Greek yogurt ice cream is naturally sweet, refreshingly tangy, and unbelievably easy to make without an ice cream maker.

Ingredients

  • 1 cup frozen blueberries
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon honey, plus more for drizzling if desired
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Fresh blueberries, for serving (optional)
  • Fresh mint leaves, for garnish (optional)

Instructions

  1. Add the frozen blueberries to a blender or food processor.
  2. Spoon in the Greek yogurt, then add the honey, milk, and vanilla extract.
  3. Blend until completely smooth and creamy, stopping to scrape down the sides as needed.
  4. Transfer the mixture to a freezer-safe container and spread it into an even layer.
  5. Freeze for about 4 hours, or until firm enough to scoop.
  6. Let it sit at room temperature for 5 minutes if needed, then scoop into bowls and serve with extra blueberries, a drizzle of honey, and mint if desired.
