5-Ingredient Blueberry Greek Yogurt Ice Cream

This creamy, fruity blueberry Greek yogurt ice cream is naturally sweet, refreshingly tangy, and unbelievably easy to make without an ice cream maker.
Ingredients
- 1 cup frozen blueberries
- 1/2 cup plain Greek yogurt
- 1 tablespoon honey, plus more for drizzling if desired
- 1/4 cup milk
- 1 teaspoon vanilla extract
- Fresh blueberries, for serving (optional)
- Fresh mint leaves, for garnish (optional)
Instructions
- Add the frozen blueberries to a blender or food processor.
- Spoon in the Greek yogurt, then add the honey, milk, and vanilla extract.
- Blend until completely smooth and creamy, stopping to scrape down the sides as needed.
- Transfer the mixture to a freezer-safe container and spread it into an even layer.
- Freeze for about 4 hours, or until firm enough to scoop.
- Let it sit at room temperature for 5 minutes if needed, then scoop into bowls and serve with extra blueberries, a drizzle of honey, and mint if desired.
Tip: For the creamiest texture, use full-fat Greek yogurt and blend the mixture thoroughly before freezing.
