Healthy Bounty Coconut Chocolate Cake

This healthy Bounty-inspired dessert layers a soft chocolate banana base with a creamy coconut yogurt topping and a rich dark chocolate finish.
Ingredients
- 1 ripe banana, mashed
- 1 egg
- 1 1/2 tbsp cocoa powder
- 1 pinch baking soda
- 1/2 tsp lemon juice
- 250 g plain yogurt
- 40 g shredded coconut, plus extra for topping
- 1 tsp vanilla syrup
- 40 g dark chocolate, melted
- 1 tsp coconut oil or milk, for thinning melted chocolate if needed
Instructions
- In a microwave-safe dish or bowl, mash the banana until smooth, then mix in the egg, cocoa powder, baking soda, and lemon juice until fully combined.
- Microwave the chocolate banana mixture for about 4 minutes, or until set and cake-like. Let it cool completely.
- In a separate bowl, stir together the yogurt, shredded coconut, and vanilla syrup until thick and creamy.
- Spread the coconut yogurt mixture evenly over the cooled chocolate base.
- Melt the dark chocolate, adding the coconut oil or a splash of milk if you want a smoother drizzle.
- Pour or drizzle the melted chocolate over the top, then finish with extra shredded coconut.
- Chill for 15 to 30 minutes before serving for the best texture and clean slices.
Tip: For a firmer, more Bounty-like filling, use thick Greek yogurt or strain regular yogurt for 30 minutes before mixing.
