Carrot Oat Muffins

These soft, naturally sweet carrot oat muffins are wholesome, tender, and perfect for a quick snack or easy breakfast.

Ingredients

  • 1 cup rolled oats
  • 1 cup finely grated carrot
  • 1 large egg
  • 2 tablespoons peanut butter
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tray with paper liners.
  2. In a medium bowl, combine the rolled oats, grated carrot, cinnamon, baking powder, and salt.
  3. Add the egg, peanut butter, honey, and vanilla extract, then mix until everything is well combined and a thick batter forms.
  4. Fold in the chopped walnuts if using, then let the batter sit for 5 minutes so the oats can soften slightly.
  5. Spoon the mixture evenly into the prepared muffin cups, filling each about 3/4 full.
  6. Bake for 15-18 minutes, or until the muffins are set and lightly golden on top.
  7. Let the muffins cool in the tray for a few minutes before transferring to a rack to cool slightly and serve.

Tip: For a softer texture, pulse the oats in a blender for a few seconds before mixing into the batter.
