Carrot Oat Muffins

These soft, naturally sweet carrot oat muffins are wholesome, tender, and perfect for a quick snack or easy breakfast.
Ingredients
- 1 cup rolled oats
- 1 cup finely grated carrot
- 1 large egg
- 2 tablespoons peanut butter
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 tablespoons chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tray with paper liners.
- In a medium bowl, combine the rolled oats, grated carrot, cinnamon, baking powder, and salt.
- Add the egg, peanut butter, honey, and vanilla extract, then mix until everything is well combined and a thick batter forms.
- Fold in the chopped walnuts if using, then let the batter sit for 5 minutes so the oats can soften slightly.
- Spoon the mixture evenly into the prepared muffin cups, filling each about 3/4 full.
- Bake for 15-18 minutes, or until the muffins are set and lightly golden on top.
- Let the muffins cool in the tray for a few minutes before transferring to a rack to cool slightly and serve.
Tip: For a softer texture, pulse the oats in a blender for a few seconds before mixing into the batter.
