Quick Tortilla Pizza with Spinach

This quick tortilla pizza bakes up golden, crispy, and loaded with creamy cottage cheese, melty cheese, and fresh veggies in every bite.
Ingredients
- 1 large flour tortilla
- 1 egg
- 1/2 cup cottage cheese
- 1/2 cup shredded mozzarella or pizza cheese
- 1 small tomato, thinly sliced
- 1/2 cup cauliflower, finely chopped or grated
- 1 cup fresh spinach, roughly chopped
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C) and line a baking tray or pizza pan with parchment paper.
- Place the tortilla on the tray. In a small bowl, whisk the egg with the cottage cheese, salt, and black pepper until combined.
- Spread the egg and cottage cheese mixture evenly over the tortilla, leaving a small border around the edges.
- Top with the chopped cauliflower, spinach, tomato slices, shredded mozzarella, and Parmesan.
- Drizzle lightly with olive oil for extra color and crispiness.
- Bake for about 15 minutes, or until the tortilla edges are crisp, the cheese is melted, and the top is golden.
- Let it cool for 1 to 2 minutes, then slice and serve warm.
Tip: For an even crispier base, bake the tortilla for 2 to 3 minutes before adding the toppings.
